Description: Cour-Cheverny is the only place in the world that is planted to this grape variety called Romorantin. It is a tiny appellation of only about 55 hectares with only a handful of winemakers. The wines made with Romorantin are rather crisp and fresh and are often compared to its relative grape variety, Chardonnay. However, this particular wine is made in a different style where the grapes are harvested later than usual, concentrating grape sugars. The grapes are hand harvested from these vines that are about 80 years old. Fermentation takes place in stainless steel tanks with indigenous yeast strains and then matured on its lees in old oak for about 12 months prior to release. A very versatile wine when it comes to food pairing. Will work with a variety of dishes from vegetable and fish courses to cheese and desserts
