Description: The commitment and dedication to quality vine growing and winemaking on the steep hillsides of Mount Etna has earned Salvo Foti his nickname: 'The Godfather' of Etna. The winery was established in 2001 in a bid to create something for himself, after having worked extensive careers in prominent estates such as Biondi Santi and Benanti, as winemaker and consultant.
The Aurora is a blend of mostly Carricante, an indigenous grape to the vineyards around Mount Etna. Carricante origins are tied to the province of Catania in Sicily - also Salvo Foti's home - and produces crisp and mineral wines of great fruit and floral aromatic and flavour concentration. The wines are incredibly gastronomic and its oilier textural add to its complexity and improve its mouthfeel. The wines are fermented in stainless steel tanks and aged for a year on its lees.
